Cinnamon

Cinnamon Buns

This is the recipe I have been making for years, but somehow I never posted it here. Before I knew I could make these things myself (before I really got into baking at home), I used to eat them during every trip to the US or Canada. Preferably as breakfast or afternoon snack. I prefer the buns slightly warm -fresh out of the oven or the next day heated up- without the thick layer of frosting. I just don’t like frostings that much, also the reason why I dislike most cupcakes.

Coconut buns

Hmmmm.. checked my drafts today and this one was never posted. This is a post from December 2012!! >.< Here it is now. Just over one and a half years later….. Ahum. I won’t be posting recipes for a while probably. I just started my internship (it is part of my program at school). I work 5 days a week now and don’t feel like making a mess in the kitchen and cleaning it up when I’m at home. :p

Millefeuille

Millefeuille is a traditional French pastry. I believe the English speaking world knows it as a Napoleon. Traditionally, a millefeuille consists of three layers of puff pastry and in between those layers, two layers of pastry cream. There are many variations of the traditional one with fruits, chocolate, caramel or anything really. I enjoy eating millefeuille, I like the crisp buttery layers of puff pastry in combination with the cream. yummm. The traditional way of making this pastry takes a lot of time, here is a quick and simple version for you!

Birthday sweets

My birthday was a while ago now (July 6th) but I haven’t posted the birthday cakes I made yet. If you are following me on Facebook or Instagram you might have seen them already, but for those who don’t: Here they are! I made all of the cakes, except the roll cake, myself. Started to prepare everything on Saturday and finished all on Sunday morning. Everyone enjoyed eating the sweets and I had a great birthday.

Strawberry Basil Dacquoise

Hey there! I’m back home and I have been baking a lot for my birthday, a bbq and some cake orders. Last Friday we had a BBQ with the neighbors and I made this summery dacquoise cake for dessert. A dacquoise cake is made of whipped egg whites, sugars, almond and flour. I think it tastes quite like a macaron shell, as it has the same ingredients. You should try it!

Mini coffee eclairs

L’eclair au café de Christophe Adam!

A couple of months ago I started to gain interest for this book of Christophe Adam called Eclairs!, it was only available in French (my French is still very poor) and I would have to order it from abroad with high shipping costs. So I procrastinated and never ordered.

To my surprise I saw the book is now available in Dutch! (yep, my main language) I went to the store and bought it immediately. These are the first eclairs I have made from this book and I’m sure many more will follow. ^^

These are mini eclairs, they are 6cm long, filled with coffee pastry cream, glazed with coffee glaze and decorated with a chocolate coffee bean.

Currently I’m busy with work and saving money so I can attend a pastry course in Paris. It is very expensive so for those who would like to help me, I made you a button. You can find it in the sidebar! I’m not really expecting anyone to help me, but it doesn’t hurt to ask right?

Easter chocolate cupcakes

I don’t regularly eat and make cupcakes as I don’t like buttercream frostings. But for this occasion I made cupcakes! My way. This is a super chocolat-y chocolate cupcake with pieces of chocolate inside, chocolate ganache and chocolate easter eggs on top. Yes, I like chocolate.
