Wednesday the 26th of November I officially graduated from Ferrandi. After 5 months of doing the Intensive program in French Pastry and 3 months of interning we all got our diplomas. After a break from testing pastries in Paris I’m back in the game! A week ago I checked out the bar Les Heures inside the palace hotel Prince de Galles. The bar is the “casual” dining place of the hotel and where the afternoon tea happens. I took the “French tea time / thé a la française” which consists of a hot drink, a pastry of choice and a selection of cakes for €32. Read more…
Last weekend we had tea at Four Seasons George V hotel. We took the set Goûter à la Française (€60) at La Galerie, the salon du thé.
This includes 1 glass of champagne, an assortment of sandwiches, petit gateaux and petit fours. On the top level were a scone, canelé, madeleine and financier. Second level had a macaron aux mûres (blackberry), millefeuille, chocolat tart and verrine with mango pineapple (I think). The bottom level had 4 kinds of sandwiches with different kinds of bread.
